The Glycemic Index

The Glycemic Index (GI) is a numerical Index that ranks carbohydrates based on their rate of conversion to glucose during digestion. Carbohydrates are ranked on a scale of 0 to 100, as the more rapidly a certain food causes a rise in blood sugar, the high value it is given. 100% glucose serves as a reference point, marking 100 on the GI scale.
